We’re back with another offering sourced through Indochina Coffee! We hope this will serve as a great opportunity for our community to experience another washed coffee from the Yunnan region of Southeastern China and to explore how terroir and distinctly different farms can affect the flavor profile of the Catimor cultivar.
Yunnan Coffee Traders, or YCT for short, have been working with Indochina since they first began importing their coffees to the UK back in 2016. YCT have returned to share their produce every year since then, their mission being to engage with local farmers to promote sustainable production, as well as providing education and research to their community. In terms of the Chinese export market, YCT is truly unparalleled in maintaining traceability and transparency to their importing partners and the roasters alike. They have been hailed as a true pioneer of specialty Chinese coffee, having managed the Banka farm, mill and washing station for many years. As a result of this collaboration, the milling operation at Banka is truly world-class, as they have installed a state of the art optical sorting machine to enhance their coffee quality, a first for the region. Their commitment supporting their network of farmers to maintain quality is paramount to their success, something that was evident in the first green samples we received from Banka.
YCT have leveraged their world class washing station to help farmers diversify their lineup of cultivars, some of which are mainstays on our farms in El Salvador, such as Yellow Bourbon and Pacamara, but that are otherwise still novel to the region. They have also begun utilizing new and interesting methods of yeast fermentation, having become noteworthy across Yunnan for their production of natural and honey processed coffees in their robust lineup of remarkable offerings. We hope this coffee serves as a reminder that our notions around origins, processes, roast degree and flavor profile may not always be correct, and that exploring beyond our preferred palate can redefine how we understand and enjoy coffee.
