Our next offering comes from another origin we have yet to source coffee from, as this year we have focused our efforts on bringing new and exciting coffees to the table so our community can experience what origins the world over are capable of producing. This coffee was grown in a primarily indigenous community called San Cristobal de Las Casas in the tropical highlands of Chiapas, Mexico. This locale is often called “Pueblo Magico” or Magic Town, and to the people who call this place home, the cultivation of coffee is part of their way of life. Being equidistant from both the Gulf of Mexico and the Pacific coast, this region benefits from a perfect variation of weather, rich healthy soil, and elevation, all factors that create the ideal growing conditions for the cultivation of specialty grade coffee. This particular lot is primarily composed of cherry brought to market by smallholder farmers who grow a variety Caturra, Typica, and Marsellesa cultivars. Once the coffees arrive at the mill they are fermented in the cherry for 12-18 hours before being pulped and left to dry in full sunlight on concrete patios. Mexico is a powerhouse in the Central American coffee industry, and the rainforests of the Chiapas district are home to some of the very best coffees grown in the country. The offerings we have received over the last couple of years have only improved in cup quality, and as this harvest season approached we knew we wanted to find a coffee that would fit into our lineup of cost effective microlots. This offering is sure to satisfy the folks in our community who love a good washed coffee with a rich flavor profile that maintains a crisp and complex acidity that is imparted by the short period of fermentation during processing.
