This washed lot from the Zapotitlán Cooperative is mellow and balanced. With notes of fresh pecan, cacao nib, and rich tobacco, this offering represents all of the qualities one would anticipate from a superb Mexican coffee.

It’s no secret that 2025 has been among the most challenging years for the specialty coffee industry the world over, and we’ve been doing our best to make more direct trade connections to bring our community the caliber of coffees they expect from us. Earlier this year, our team met with Ernesto Pérez to begin sourcing coffee from their operation. Ernesto helms APG, a coffee milling powerhouse located in Veracruz, a region of México just south of Puebla, where this coffee was produced. Our team has been cupping Mexican coffees for the better part of a decade, and the samples we tried from APG have been remarkably clean, consistent, and balanced. As we gear up to announce more of our direct trade partnerships, we are beginning with this release from a small but mighty coffee cooperative called Zapotitlán, located to the east of México City in the Puebla region of Southern México. Zapotitlán’s coffee is produced at an average elevation of 1800 masl, making this lot a strictly high-grown coffee. The blend of cultivars contains a number of climate and pathogen-resilient hybrids such as Criollos, Sarchimor, Catimor, and Marsellesa, coffees that are fast becoming the choice cultivars for coffee producers in Latin American countries. This lot from the Zapotitlán cooperative is a perfect example of an easily drinkable washed coffee, with a flavor profile that is as clean as it is balanced.

We ship to the entire United States via the US Postal Service and UPS. Transit times typically take 1-5 days depending on how far away you are from Tulsa, OK. Once your order is in the hands of of the postal carrier, we do not have any control over how quickly the package is delivered.

We are roasting coffee daily, Monday-Friday. We aim to fulfill online orders with coffees between 1-7 days off roast, so that when it is delivered to you it's had time to degas and is ready for brewing.

Coffee is best brewed after it has had time to degas (at least 5-7 days off roast). Coffee's aroma will be at its peak intensity and freshness within the first month after roasting. So, if you are planning on signing up for a subscription, it's best to order for a month's supply at a maximum if you are looking to get the absolute best out of your beans.
