ABOUT THIS PRODUCT

This coffee is velvety and balanced, expect notes of creamy milk chocolate, vibrant melon, with a sweet appley finish.

Our next offering comes from the Quiche region of Guatemala, produced by smallholders and processed at the Joyabaj wet mill. This mill has only been operating since 2021, but in that short time, the facility has become an incredibly important resource to many of the smallholder farmers of the community. Not only is the mill centrally located in the region relative to their network of smallholder farmers, but it also provides a transport service to fetch coffee cherries from some of the farms that do not always have access to a reliable method of transportation for the heavy sacks of coffee they produce. This is the first time we sampled any coffees from the Joyabaj Mill, and this offering was an immediate standout on our cupping table.

We’ve been fortunate to find some excellent coffees this year, but honey process coffees have been noticeably harder to find. The “honey” processing method involves pulping the coffee bean, or seed, from the coffee fruit while leaving only a thin layer of the sticky, sugary mucilage on the coffee as it is dried. While this process has changed over the years with some producers favoring a longer drying period to explore the funkier, wilder flavors that can develop, one thing is true for the honey method: it’s getting more difficult and much riskier for producers, a lot of whom depend on the predictability and consistency of washed coffee. As climate change escalates, regions across the globe have struggled with a litany of issues such as increased risk for mold, higher than average humidity, and longer, more chaotic storm seasons. These issues not only make it harder to grow coffee, but they also can make processing a great deal more difficult. So, when a great honey-processed coffee makes it all of the way from its origin to our roastery, we appreciate it all the more, and we hope our community does too!

Puzzle? I started this one with a pore at our normal 210f where it had a punch we didn't really care for. That said using a smaller pore (30g vs 40g) at 195f brought this into an enjoyable cup.

This is a lovely easy drinker. I'd call this closer to medium on the roast level (and darker than my normal). It is balanced, lightly sweet, no bitterness, with low acidity.

Brew Method: 90°C with Hario Switch at 1:18 ratio using distilled water with TWW medium profile. Ground on 1zpresso K Ultra at setting 8.6. 30s bloom, then single pour with Hario drip assist. Total brew time 2:45.

I tend to prefer a tea like brew with less body. The above method gave that, so factor that in when you decide on your method.

Tasting notes: cacao and pecan (more general nuttiness) forward, no fruit, pipe tobacco hints in the finish with some baking spice.

I'll buy this again.

No great way to make changes online. Same flavor several weeks in a row. no way to really keep track. Love the convenience of recently roasted bags to our door though.

Frequently Asked Questions

ALL orders, regardless of shipping method chosen, typically takes 1-2 business days from the date of order for us to roast, package, and ship.

We ship to the entire United States via the US Postal Service and UPS. Transit times typically take 1-5 days depending on how far away you are from Tulsa, OK. Once your order is in the hands of of the postal carrier, we do not have any control over how quickly the package is delivered.

We are roasting coffee daily, Monday-Friday. We aim to fulfill online orders with coffees between 1-7 days off roast, so that when it is delivered to you it's had time to degas and is ready for brewing.

Coffee is best brewed after it has had time to degas (at least 5-7 days off roast). Coffee's aroma will be at its peak intensity and freshness within the first month after roasting. So, if you are planning on signing up for a subscription, it's best to order for a month's supply at a maximum if you are looking to get the absolute best out of your beans.

No, these are natural flavors found in the coffee. Coffee is the seed of Coffee Fruit. Like any other fruit in the world there are 1000s of botanical varieties. Different varieties will have different flavor characteristics, a lot like wine.

Other things that impact a coffee’s flavor include where the coffee is grown, how the fruit is processed, how the seed is dried, how well the coffee is sorted, how the coffee is roasted, and lastly how you brew it.
