ABOUT THIS PRODUCT

This anaerobic honey from the Sirinya farm of Thailand is unique and exceptional, with notes of brut champagne, mellow and sweet honeydew melon and vibrant Meyer lemon.

In 2024, we tasted hundreds of coffee samples to find the perfect blends for our Apex Series. After facing challenges with importing, tariffs, and customs, we discovered Sirinya Coffee from Thailand, a rare gem that exceeded our expectations. Grown at 1450 masl in the mountainous Chiang Rai province, this coffee is produced by Oil and Goh Chaosuwanwilai. They operate a small roastery, coffee shop, and farm, ensuring full control over the process.

This lot of Bourbon, Caturra, and Catimor was processed using the anaerobic honey method, adding a unique fermentation profile with melon, citrus, and champagne-like booziness. Despite the risks of anaerobic methods, Sirinya’s expertise resulted in a complex, smooth coffee that impressed our team.

Thailand’s coffee industry has grown rapidly since the 1970s, transitioning from opium poppy cultivation to coffee farming. While Thailand mostly grows robusta, the Chiang Rai region offers ideal conditions for arabica cultivation. As a result, Thai coffee remains rare in the U.S., making this offering from Indochina Coffee an exciting and exclusive addition to our collection.

ALL orders, regardless of shipping method chosen, typically takes 1-2 business days from the date of order for us to roast, package, and ship.

We ship to the entire United States via the US Postal Service and UPS. Transit times typically take 1-5 days depending on how far away you are from Tulsa, OK. Once your order is in the hands of of the postal carrier, we do not have any control over how quickly the package is delivered.

We are roasting coffee daily, Monday-Friday. We aim to fulfill online orders with coffees between 1-7 days off roast, so that when it is delivered to you it's had time to degas and is ready for brewing.

Coffee is best brewed after it has had time to degas (at least 5-7 days off roast). Coffee's aroma will be at its peak intensity and freshness within the first month after roasting. So, if you are planning on signing up for a subscription, it's best to order for a month's supply at a maximum if you are looking to get the absolute best out of your beans.
