This Swiss Water Decaf from our farms in El Salvador delivers on all fronts to be as rich, smooth and delicious as its fully caffeinated counterparts. The Santa Ana is a lighter, more dynamic roast, with sweet, vibrant notes of dried fruit, rich nougat, with a robust and chocolatey cacao nib finish.

 

Over the years, we have sourced dozens of different decaf lots from origins around the world, and though we’ve found some truly remarkable offerings, traceability remains an issue. After participating in the James Hoffman decaf project, we were able to learn a lot about the different decaf processes available and how they affect the flavor of the coffee in question. This gave us a perfect opportunity to retool our decaf program, and after over a year of research, development, coordination, and immense effort, we are very proud to have accomplished something truly remarkable in the specialty coffee industry. For the first time ever, we sent a container of coffee from our farms in El Salvador to the Swiss Water Decaffeination Plant in Vancouver, British Columbia, to have our very own direct trade, single origin decaf coffee.

This project has required an immense amount of collaboration from our team in El Salvador, our team here in Tulsa, and the good folks at Swiss Water in Vancouver. We are absolutely thrilled to be offering this one-of-a-kind product, as we are one of the few roasteries in the world over who are offering a direct trade, decaffeinated coffee in tandem with its fully caffeinated counterparts. This is not only a great opportunity for us to guarantee a market for our network of farms in El Salvador while also stepping up our decaf game, but also for anyone who is interested in seeing how decaffeination affects the coffee in question. This coffee is designed to be a one-to-one decaffeinated version of our medium roast Signature Espresso, with a velvety texture and all the classic attributes of a traditional espresso roast. We did our very best to select coffees to match the smooth and subtly fruity flavor profile of the EA Colombia decaf our community has grown accustomed to by blending in a splash of a dynamic naturally processed coffee with a washed lot from Ayutepeque, a coffee farm that has been in the Lopez-Diaz family for over a hundred and seventy five years. This project has been a key stepping stone for us as we continue to build a more resilient coffee program focused on direct and sustainable trade, ethical sourcing, and superb coffee. We do recommend to consume pre-ground coffee within 2 weeks after opening to experience maximum freshness of flavor. 

Espresso (Fine) - best for home espresso machines, moka pot and some Aeropress recipes

Pour Over (Med-Fine) - best for single cup pour over methods with 2-3 min brew times: V60, Kalita, Malita, Clever, etc

Drip (Medium) - best for auto-drip makers and larger pour overs with 4-6 min brew times such as Chemex
