Snooze Button
Too tired to get up in the morning, because you couldn't fall asleep the night before, because you drank too much caffeine that afternoon? We have a solution, just hit the Snooze Button!
Snooze Button is a half caff blend comprised of equal parts of our deliciously sweet Colombian Sugar Cane Decaf and Colombian Pedgregales. The combo is superbly superb, to be purposefully redundant. If you need to decrease your caffeine intake, or just like darn tasty coffee try this one on for size.
House Decaf
First off, we source our decaf from Café Imports, who's producer partners are based in Colombia. They start by selecting high quality Specialty grade coffees, grown by small producers. Then the coffee undergoes a direct-solvent based decaffeination process using naturally derived Ethyl Acetate from sugar cane. This method is often referred to as the "Sugar Cane E.A. process."
Sugar Cane E.A. processing starts by fermenting molasses derived from sugar cane to create ethanol (so basically rum). This alcohol is then mixed with acetic acid (vinegar), to create the compound ethyl acetate.
When the coffee is received at the decaffeination plant, it is first submitted to a condition of water and steam. This elevates the moisture content in the seed and swells the interior porous structure in order to facilitate the extraction of the caffeine. It is at this point, that the bean experiences an E.A. wash, which molecularly binds with and dissolves the caffeine. The seeds are then cleaned with fresh water, followed by steam, to clean the inner most pours of the seed. Finally, the seeds are dried until reaching the moisture similar to which they had prior to the process. This method avoids excessive heat or pressure, which can radically disrupt a green coffee's cellular structure, thus degrading the flavor quality of the coffee.
Out of all the processes, we find it to have the least impact on flavor quality. It is considered a safe to consume method, as after the cleaning/steaming/roasting process there is typically less than 1 part per million of E.A. residue left on the coffee. EA is only harmful to humans in excess of 400 parts per million.
Seasonal Decaf
Over the course of late 2023, we challenged our roasting team to sample and cup decaffeinated coffees from origins around the globe. We started to find that there were many samples that exceeded our expectations and forced us to rethink how we approach sourcing and roasting decaf offerings. In hopes to share this experience with you, as the year continues we will be offering a new specialty decaffeinated coffee every season so we can highlight how the diversity of origins, processing methods and roast profiles can produce a truly memorable sensory experience.
This coffee was decaffeinated using a process called Select Water. During this procedure, green coffee seeds are first dried in the cherry before they are hulled and then soaked in fresh water. This causes the pores of the coffee seeds to expand so that the flavor compounds and caffeine can be more easily transferred out of the bean. Once finished, the rehydrated coffee is introduced to coffee solubles that bind to the caffeine while leaving the majority of the flavor compounds intact to be reabsorbed into the coffee seeds. Once the caffeine is extracted, the coffee is then dried once more before being packaged and exported around the world.
In the cup, this Decaffeinated Ethiopian Select Water exhibits a bouquet of florality including notes of Lavender and Jasmine that are rounded out with rich black tea undertones. This delicate flavor profile is accentuated by a remarkably creamy mouthfeel.
