Our Manzano Honey is consistently one of our favorite coffees we produce on Finca El Manzano. We start by picking fully ripe Red Bourbon cherries, then we pulp the cherries, removing the skin and leaving on all the pulp around the seed. The seed is then dried with the pulp intact. The result is a coffee that dials up the sweetness in the cup, without imparting the fruity flavors of a fruit-dried (or natural) processed coffee. In this lot, you’ll find a rounded body with balanced tangerine-like acidity. In the nose, flavor’s of roasted almond, vanilla, honey, and dried fig.
