Our Top Box represents a snapshot of some of the best coffee selections we have to offer on a monthly basis. It typically contains a mix of 4oz bags of limited availability micro-lots, fresh crop arrivals, and/or new seasonal blends. In April, savor the arrival of seasonal delights with our coffees boasting rich notes of honeysuckle, clementine, and sangria.


In the Box:


Manzano Washed 

Topeca acquired this SHG farm in 2001. It is also home to our state of the art micro-mill, Cuatro M Cafes, where we process all of our Seed-to-Cup coffees. About 80% of this farm is designated to bourbon trees, though in 2005 we have began planting well separated experimental lots of Pacamara, Yellow bourbon, Kenyan SL-28 and SL-34, Gesha, and Ethiopian varieties. Coffees from this farm benefit from the higher altitude, which results in a denser, sweeter cup with more acidity and fruit character, as compared to our Ayutepeque coffee. The Red Bourbon variety that we grow here offers a classic El Salvador cup profile. Nutty sweetness, with slight citrus and honeyed overtones, and a lasting tobacco finish. You really can't go wrong with this coffee.

 Manzano Natural 

We typically reserve this coffee as the secret (well not so secret now) ingredient to our Signature Espresso Blend and Porch Session. But each year we like to make this coffee available on its own upon new crop arrival in early spring for a limited time. This is the most awarded coffee from our farm, Finca el Manzano. For the past decade this coffee has been used by a handful of national and world Barista Champions, and there's good reason why...it's freakin' delicious.

Our fruit dried coffees from El Manzano start with fully ripe, fresh harvest cherries. Diligent hand sorting is done before the cherry gets to the wet mill to ensure all fruit that gets dried for this process is of prime-ripeness for maximum sweetness in the cup.

This coffee is lightly roasted to bring out the coffee's natural sweetness, acidity and fruit flavor.

 Crop Top

Crop Top, the counter part to our cold weather seasonal blend Sweater Weather, is designed for the warm days ahead. Fresh spring vibes and long sweltering summer afternoons. This light-to-medium roasted blend of washed, natural, and honey processed coffees creates a vibrant yet well-balanced brew bursting with juicy acidity and fruity sweetness. A nice melange of nut, fruit, and spice notes reminds us of sangria at the season's first garden party. Enjoy this coffee as full flavored filter brew, or extract it cold for a crisp and refreshing cold brew.

While you're at it, grab an old pair of acid wash jeans, your older brother's Metallica t-shirt, a pair of scissors, and get to cutting. Let it all hang out!

Don't own a grinder? Don't own a good grinder? Not a problem, let us expertly grind the coffee for you depending on the method with which you brew. We roast, grind and package your coffee to order, so it gets to you just a few days after roasting. We do recommend to consume pre-ground coffee within 2 weeks after opening to experience maximum freshness of flavor. 

Espresso (Fine) - best for home espresso machines, moka pot and some Aeropress recipes

Pour Over (Med-Fine) - best for single cup pour over methods with 2-3 min brew times: V60, Kalita, Malita, Clever, etc

Drip (Medium) - best for auto-drip makers and larger pour overs with 4-6 min brew times such as Chemex

French Press (Med-Coarse) - best for French press and cold brew methods.
