This mill has only been operating since 2021, but in that short time, the facility has become an incredibly important resource to many of the smallholder farmers of the community. Not only is the mill centrally located in the region relative to their network of smallholder farmers, but it also provides a transport service to fetch coffee cherries from some of the farms that do not always have access to a reliable method of transportation for the heavy sacks of coffee they produce. This is the first time we sampled any coffees from the Joyabaj Mill, and this offering was an immediate standout on our cupping table.\u003c\/p\u003e\n\u003cp\u003eWe’ve been fortunate to find some excellent coffees this year, but honey process coffees have been noticeably harder to find. The “honey” processing method involves pulping the coffee bean, or seed, from the coffee fruit while leaving only a thin layer of the sticky, sugary mucilage on the coffee as it is dried. While this process has changed over the years with some producers favoring a longer drying period to explore the funkier, wilder flavors that can develop, one thing is true for the honey method: it’s getting more difficult and much riskier for producers, a lot of whom depend on the predictability and consistency of washed coffee. As climate change escalates, regions across the globe have struggled with a litany of issues such as increased risk for mold, higher than average humidity, and longer, more chaotic storm seasons. These issues not only make it harder to grow coffee, but they also can make processing a great deal more difficult.
