Back again and fresh for 2021, comes a lot from our favorite Colombian farmer, Elver Paya! We were first introduced to Señor Paya's coffee by our exporting partners at Cedro Alto Coffee Collective several years ago, and ever since we've been hooked. We've been lucky enough to secure most of Paya's entire harvest over the past couple of years. 

Elver Paya is a member of the indigenous Nasa We'sx tribe and his 10 hectare farm, Los Pedregales is Organic certified. This farm is part of the San Pedro Reserve. Paya is one of a handful of coffee producers who is attempting to re-establish specialty coffee production this region, which was decimated by military/FARC conflicts throughout the 1990s.

This blend of traditional Caturra and Colombia F8 varietals, is harvested ripe, washed via dry fermentation, then dried on covered patios. The cup profile is eloquently rich and sweet, with notes of red grape, blackberry, brown sugar and cinnamon.

Please note, if you are signing up for a subscription for our Colombian coffee, the farm/lot name may change throughout the year as we receive new harvest lots. We aim to sources coffee with similar flavor profiles harvest to harvest. 

Don't own a grinder? Don't own a good grinder? Not a problem, let us expertly grind the coffee for you depending on the method with which you brew. We roast, grind and package your coffee to order, so it gets to you just a few days after roasting. We do recommend to consume pre-ground coffee within 2 weeks after opening to experience maximum freshness of flavor. 

Espresso (Fine) - best for home espresso machines, moka pot and some Aeropress recipes

Pour Over (Med-Fine) - best for single cup pour over methods with 2-3 min brew times: V60, Kalita, Malita, Clever, etc

Drip (Medium) - best for auto-drip makers and larger pour overs with 4-6 min brew times such as Chemex

French Press (Med-Coarse) - best for French press and cold brew methods.
