It's been a while since we've roasted up some Pacamara from the farm. This year's harvest was too hard to pass up. Indeed, we'd go so far to say that this cup took it for the win out of all of this year's microlots. 

Pacamara is a hybrid cultivar of the Bourbon derived Pacas and Typica derived Maragogipe, also known as the "elephant bean" due to its extra large size. Typically Pacamara offers an herbaceous, floral, and citrusy flavor profile. This lot started with selectively picked ripe cherries harvested from our award winning La Cumbre microlot. We then let the cherries dry intact on raised beds for 2 week. This slow drying process imparts deep and complex flavors to the seed that otherwise wouldn't develop in washed processed. 

In this cup you'll find a bouquet of floral and fruity aromas reminiscent of jasmine blossom, black tea, plum and papaya. The body is syrupy and rich with a zesty acidity to cut through it all and leave your palate ready for another sip.

We roast, grind and package your coffee to order, so it gets to you just a few days after roasting. We do recommend to consume pre-ground coffee within 2 weeks after opening to experience maximum freshness of flavor. 

Espresso (Fine) - best for home espresso machines, moka pot and some Aeropress recipes

Pour Over (Med-Fine) - best for single cup pour over methods with 2-3 min brew times: V60, Kalita, Malita, Clever, etc

Drip (Medium) - best for auto-drip makers and larger pour overs with 4-6 min brew times such as Chemex

French Press (Med-Coarse) - best for French press and cold brew methods.
