This year's Limited Edition release (is an exceptional experimental coffee from our family farm, El Manzano. Last December we went down to the farm to hand select and process a coffee to use for the 2020 U.S. Brewer's Cup Competition. We selected a variety of coffee typical to Kenya, called SL-34, from a lot on the farm aptly named La Cumbre, or The Peak. We grow many exotic cultivars on this lot, including SL-28, Pacamara, Ethiopian Heirloom, and Gesha, which snagged 1st and 2nd place in the 2018 Cup of Excellence. 

After harvesting the ripe cherry, we pulped the cherry, removing the skins and pulp from the seeds (the coffee is referred to as parchment coffee at this stage). But instead of discarding the skins to be composted, we added them to the fermentation tanks with the parchment coffee (think orange wine). Then we inoculated the tanks with a mix of Belgium brewers microbes for a controlled fermentation to loosen the mucilage layer from the parchment. Once the fermentation was complete we dried the coffee on raised beds, again in contact with their pulped skins. 

The result was a cup of coffee that blew away the Brewer's Cup judges, awarding our competitor, Tyler Duncan, the highest Open Service score of the competition (94.27 points)! 

In the cup you'll find a bouquet of fruit and spice. On the nose, you'll be enticed with the warming aroma of peach cobbler and cherry pie. Tamarind is the prominent flavor up front, which mingles nicely with the tart, Amarena cherry-like acidity. The body is round and juicy with a lingering aftertaste of brown sugar and baking spices. 

We highly recommend brewing this one cup at a time, taking your time to appreciate how it changes as it rests. We find it only starts getting really tasty at least 7-8 days off roast. It will only get better from there as it has longer to degas. Don't be using that dirty tap water either! Not even that Brita filter in your fridge. Get some quality stuff, such as bottled natural spring water (something in the 100-150 TDS range). Or grab yourself some coffee water mix from Third Wave Water or Global Customized Water. Pour Over (Med-Fine) - best for single cup pour over methods with 2-3 min brew times: V60, Kalita, Malita, Clever, etc

Drip (Medium) - best for auto-drip makers and larger pour overs with 4-6 min brew times such as Chemex

French Press (Med-Coarse) - best for French press and cold brew methods.
