Back again from this year's harvest is a honey processed coffee from Finca Alto de los Santos. This farm is a certified organic farm run by Maria Rosaura Romera and her sons. This lot is made up of Caturra and Catuai varieties. The farm sit at about 1,350 meters above sea level in the town of Corquin, Copan. They farm is planted with diverse vegetation (fruit trees, hardwoods, and evergreens) that offer shade to the coffee and a healthy habitat to various fauna.
The honey process, wherein the pulp is left intact to dry upon the seed focuses on sweetness. This lot is great example of the processing technique, creating a sweet and clean cup profile that offers up flavors of baked apples, caramel, brown sugar, honey, and baking spices in the finish. It has a medium/malic acidity the balances nicely with the heavy, syrupy body.
