Form many years, we've had a great relationship with specialty coffee farmer cooperative Cedro Alto based in Pereira, Colombia. Each year we work directly with Cedro Alto's Director of Logistics, Karl, to source us some of the best coffee grown in the Tolima region by small family farmers. This area of Colombia was severely effected by the armed conflict that occurred during the 1990's, displacing many families from their homes. The region is only now in a stage of recuperation. Cedro Alto is helping small farmers in many ways, from instructing farmers on better agricultural, harvesting and processing techniques to improve cup quality, and connecting their coffee directly to roasters who pay fair, stable compensation for unique microlots with full transparency.

This lot is produced by Elver Paya, member of the indigenous Nasa We'sx tribe, on his 10 hectare certified organic farm, Los Pedregales. This farm is part of the San Pedro Reserve. This blend of traditional Caturra and Colombia F8 varietals, is harevest ripe, washed via dry fermentation, then dried on covered patios. The cup profile is eloquently rich and sweet, with notes of red grape, blackberry, brown sugar and cinnamon. 

Indeed, one of my favorite go-to coffees.

We roast, grind and package your coffee to order, so it gets to you just a few days after roasting. We do recommend to consume pre-ground coffee within 2 weeks after opening to experience maximum freshness of flavor. 

Espresso (Fine) - best for home espresso machines, moka pot and some Aeropress recipes

Pour Over (Med-Fine) - best for single cup pour over methods with 2-3 min brew times: V60, Kalita, Malita, Clever, etc

Drip (Medium) - best for auto-drip makers and larger pour overs with 4-6 min brew times such as Chemex

French Press (Med-Coarse) - best for French press and cold brew methods.
