Barista Skills Module

Learn the practical skills you need behind the espresso bar: learn how to set your grinder, milk techniques and latte art, health and safety, customer service, and basic business practices.

The 2-day Intermediate level provides a deeper understanding of the coffee itself and builds on the practical skills learned at Foundation level. Milk techniques, including latte art, are introduced as well as health and safety, customer service and basic business. This course is suitable for people already working as baristas. A minimum of 6 months of experience working in the field is recommended for this level.

The Professional level is suitable if you want to pursue specialist knowledge at a high level in Barista Skills. Success at this level should indicate to employers competence to work in the field. Extensive relevant experience is recommended before attempting this level. Candidates must hold the Intermediate qualification in the Barista Skills module before attempting the professional level.

This 3 day course takes both a scientific and managerial perspective to coffee and making espresso-based drinks

Brewing Skills Module

Learn about the variety of methods for brewing coffee and the brewing variables that affect quality. The Brewing module provides hands-on learning on grind profiles, brewing methods, measuring coffee strength and charting a coffee’s extraction

The Intermediate level is suitable if you are already part of the industry. This 2-day workshop is very much a hands-on sensory coffee workshop where you will learn to analyze your grind profile, match your grind to your brewing method and to scientifically measure coffee strength and chart a coffee’s extraction. We begin to explore the many industry myth around brewing.

This 3-day Professional level workshop takes a deeper and more scientific look at the Essential Elements of Good Brewing, what happens when we change brewing parameters, mastering the coffee brewing control chart, and dive deeper into Water and its impact on Brewing using the ideals of: Aim, Measure, Treat

You must already posses Brewing Intermediate certificate to apply for this course.

Roasting Skills Module

Learn about the roasting process, including roast cycle, roast levels, identifying defects, the physical changes that beans undergo during the roasting process, as well as workspace management and lean production.

This 3-day Intermediate workshop builds on the basics covered in Foundation and covers roast defects, the physical changes that beans undergo during the roasting process and introduces roast profiles and roast color precision.

This 4-day Professional level workshop gives you the skills and knowledge needed as a manager to plan and execute quality control by high level skills in roast process control for both color and roast time, create a product range to meet different preferences, calculate production costs and ensure efficient production based around principles of lean manufacturing.

You must already posses the Intermediate Roasting certificate to apply for this workshop.

Sensory Skills Module

Learn about the essentials of sensory evaluation in a practical and interactive manner. Sensory Skills investigates the way we perceive what we taste, how to evaluate coffee’s natural characteristics, and implementing this knowledge in business.

This 3-day Intermediate workshop is ideal for someone already working in the area who wants to develop their knowledge of sensory skills. It is broken down into three areas: How we taste, perceive and interpret; Running a cupping session and tasting the diversity of coffee; and how to set up sensory skills in your business

This 4-day Professional level workshop is aimed at people with extensive experience in the industry who wish to develop their knowledge to become sensory skills leaders in a coffee business.

You must already posses the Intermediate Sensory Skills certificate to apply for this workshop.
